Why All The Hype About A Single Barrel?

When we talk about whiskey, we frequently talk about consistency. Most bottles on the shelf e are the result of multiple barrels coming together to create a specific and repeatable profile. Blending allows distillers to balance flavors across barrels so that each batch tastes familiar.

But every once in a while, a single barrel stands out.

Single-barrel releases are an opportunity to taste whiskey in its most individual form. Instead of blending multiple barrels together, the whiskey is drawn from one barrel and bottled as such. That means every bottle reflects the exact conditions that shaped that individual cask over time.

For distillers, it is a chance to showcase how influential maturation can be. For drinkers, it is a glimpse into the unique personality that develops when spirit, wood, and time meet in just the right way.

At Oak & Grist, single barrel releases also serve another purpose. They allow us to explore the depth of our American single malt whiskey while staying true to the distillery character we build from locally grown and malted barley. Each barrel tells a slightly different story. 


What Makes a Single Barrel Special?

No two barrels age exactly the same.

Even when filled on the same day with the same spirit, barrels can develop completely different flavor profiles depending on where they rest in the rickhouse, the temperatures they experience, and if the cask has previously held something.

Single-barrel releases highlight these differences.

They allow us to showcase:

  • A terroir, or sense of place unique to our our distillery and rickhouse

  • The way different barrels shape the underlying distillery character

  • How location within the rickhouse impacts maturation

In short, our single-barrel whiskey is the purest expression of what we do as distillers. It is whiskey without the safety net we get from blending.


Our 5-Year Single Barrel Series

Our 5-year Single Barrel American Single Malt offers a glimpse into our past and a preview of where our whiskey is headed. As our barrels continue to mature in the warehouse, we gain access to new layers of complexity and character.

Each release in the series has highlighted a different barrel choice and maturation environment.

BATCH 01 - 2024 Release  

Ex-Bourbon Barrel

Our first 5-year release came from a used bourbon cask. Aging in previously filled barrels allows our distillery character to remain front and center, letting the fruit and grain profile of our single malt shine.

Tasting Notes 

Nose: apple butter, croissant, honeysuckle, butterscotch

Palate: orange confit, black tea, waffle cone, soft caramel

Finish: dried spiced fruit, orange pekoe tea, long and palate coating

This release set the foundation for the series and gave drinkers their first look at what five years in a barrel can do to our spirit.

BATCH 02 - Our 2025 Release 

Our second release explored the impact of new American oak. Compared to used barrels, fresh oak introduces a stronger wood influence and deeper caramelized character. The result was a whiskey with richer sweetness, more structure, and a bold oak presence layered over our classic orchard fruit distillery profile.

Tasting Notes

Nose - black raspberry, apple, bread pudding, orange

Palate - dark cherry, tangerine, pipe tobacco, walnut, sweet roll

FInish - long and palate coating, clove, dried fruit

BATCH 03 - Our Newest Release for 2026

Our newest release continues the exploration. The barrel itself once held red wine, adding a new dimension to how the whiskey developed over the last five years.

This barrel also spent its life aging high in the rickhouse where warmer temperatures accelerate interaction between spirit and wood. Greater temperature swings mean the whiskey moves in and out of the barrel staves more aggressively, pulling deeper flavor from the wood. The result is a single barrel that layers the familiar character of our single malt with richer fruit tones and deeper complexity shaped by the wine cask and the warmer aging environment.

Like every release in this series, there is only one barrel and a limited number of bottles. Once it’s gone, that exact expression will never exist again.

Tasting Notes

Nose - plum, honeycomb, pipe tobacco, cherry cola, sticky toffee

Palate - mexican chocolate, currant, cedar, cracked pepper, fig jam

Finish - initially sweet giving way to a dry earthy & warm spice

Single-barrel whiskey is a snapshot. It captures a single cask, a specific place in the warehouse, and a particular moment in the life of a distillery. As our barrels continue to age and profile evolves, each release reveals something new about what our whiskey can be.

For us, these releases are less about consistency and more about discovery.And that’s what makes it fun!
