The Perfect Pairing: Whiskey & Chocolate (and Other Sweet Endings)

There’s no pairing quite as timeless (or as deeply satisfying) as whiskey and chocolate. Both are crafted with intention, shaped by time, ingredients, and a bit of alchemy. At Oak & Grist, we’re as passionate about what goes into your glass as we are about how it pairs with the moments and flavors you celebrate alongside it.

Here in Asheville, the best food and beverage experiences are rooted in craftsmanship, community, and collaboration. So let's explore how we pair our whiskey with chocolate from one of our favorite local producers.

A LOCAL BOND: OAK & GRIST MEETS FRENCH BROAD CHOCOLATES

One of the most meaningful aspects of Asheville’s food and drink scene is the way local makers support and inspire one another. That spirit comes to life in our collaboration with French Broad Chocolates, featured in their Asheville Crafted Collection through a whiskey caramel bonbon made with our Descendent Single Malt Whiskey.

The Asheville Crafted Collection is a tribute to the Blue Ridge Mountains and the artisans who call this region home. Among its standout offerings is a dark chocolate bonbon filled with whiskey caramel crafted from our own grain-to-glass spirit. This isn’t chocolate simply paired with whiskey. It’s chocolate made with whiskey, where caramel sweetness, oak-inspired warmth, and rich dark chocolate come together in every bite.

This kind of creative collaboration makes Asheville unique: bringing together local chocolate makers, coffee roasters, brewers, and distillers into experiences that are greater than the sum of their parts. It also gives you a chance to experience chocolate and spirits side by side, crafted by people who take their time, their ingredients, and their community seriously.

Why Whiskey & Chocolate Work So Well Together

At their core, whiskey and chocolate complement and enhance each other thanks to shared flavor characteristics:

  • Rich, roasted notes - chocolate’s cocoa tones play beautifully against whiskey’s caramel, vanilla, and oak-driven complexity.

  • Bitterness balance - dark chocolate’s gentle bitterness can deepen the perception of sweetness in whiskey, while smoothing rough edges on the palate.

  • Textural harmony - a sip and a bite together create a layered experience, each enhancing the other’s mouthfeel and finish.

Of course, pairing is also personal; different chocolate types and whiskey profiles interact uniquely on the palate.

PAIRING SUGGESTIONS FROM OAK & GRIST

Here are a few pairing ideas to elevate your next tasting whether it’s at home, at a dinner party, or as a thoughtful gift bundle:

Dark Chocolate & SMoK American Single Malt Whiskey

We like to match the rich and dark chocolate bar with our whiskey that has aged in new oak barrels. The intense cacao notes from a 70%+ dark chocolate can enhance the caramel notes in whiskey while letting the oak influence shine through (think dark fruit, dried cherry, vanilla, and cream). The extra wood sugars from first-fill barrels complement and balance the bitterness of a darker chocolate.

We are particularly fond of our Peach Wood SMōK Single Malt paired with French Broad's Flaked Sea Salt Dark Chocolate

Whiskey-Caramel Bonbon & Descendent American Single Malt Whiskey

Like a cocktail, bonbons offer the opportunity for a more complex and layered pairing because of their filling. A lighter, fruity bonbon has us reaching for a whiskey with a grainy, slightly floral, and light baking spice profile. Whereas we find a dark, nutty, or spiced bonbon plays nicely with a smoky, dark fruit, and woody-leaning whiskey.

We are big fans of our Origin single malt whiskey (fruity, floral, grassy) with the raspberry ganache or wildflower honey bonbon. If we are feeling a little more brooding, our Descendent single malt (worn leather, salted caramel, pomegranate) with the almond praline or vanilla ganache. If you want to go full monty, just grab one of the whiskey caramel bonbons made with our Descedent single malt.

Milk Chocolate & Used Oak Barrel Expressions

Milk Chocolate's creamy sweetness isn't shy, which is why we think it pairs best with a lightly oaked spirit. This prevents a compounding sweetness that can come from the wood of our barrels.

For this one, we actually reached for our Barrel Reserve Genever (fresh berry, honey, warming spice) with French Broad Chocolate's milk chocolate and hazelnut bar.

BEYOND CHOCOLATE: OTHER SWEET PAIRINGS TO TRY

While chocolate might be the classic, it’s not the only dessert match worth exploring with whiskey. Here are a few other treats that make great companions:

  • Cheesecake and fruit tarts - balance citrus brightness with spice-heavy pours.

  • Pecan pie or caramel desserts: play up toasted sugar and nutty character or look for a spirit with a creamy, chocolate/mocha profile.

  • Ice cream with whiskey caramel sauce: a cool, creamy finish that accentuates oak and vanilla notes.

Whether you go local or think seasonally, there’s a world of sweet pairings waiting for you.

CRAFTING YOUR OWN PERFECT PAIRING

Pairing whiskey with chocolate (or any dessert) doesn’t have to be intimidating; it’s an invitation to explore flavors and moments that elevate both components. Next time you’re hosting guests or crafting a quiet evening in, grab a bottle of your favorite Oak & Grist whiskey, add a few chocolates from French Broad or another Asheville artisan, and let your palate lead the way.
